Thought I'd throw this out there, as it's something I've wondered about. The limit in Michigan is 3 a day, and I think it's similar in the eastern US. The birds' population is thought to be in decline due primarily to loss of habitat and hunting is thought not to be additive to natural mortality. Not sure how the limit of 8 was arrived at, but I suspect the with low numbers of woodcock hunters in Ontario, hunting has little impact on the birds here. That being said, I could be just as happy with a four bird limit. However if 8's not affecting the population, the season is short, I enjoy eating them, and they're great to work a pointing dog on. In an average year I might have 3-4 good days and shoot 25-30 birds.
Recipe: -bone out breasts and remove legs
-marinate for 3-4 hours in equal mix of brown sugar and soya sauce
-wrap 1/2 or 1 of breast piece with a whole water chestnut in a 1/2
slice of bacon and secure with a tooth pick
-in a tinfoil pan on the barbeque cook at a low heat until the bacon is
browned and add the legs about halfway thru
-unbelievably good and may contribute to the continenal decline of
of the population
