We made a fiddle head pie last year, basically like a quiche. It was awefully good.

I have tried the internet for recipes, but was hoping someone with experience could recommend a recipe. I remember at the Montreal National a number of years ago that the Moncton Field Trial Club put on a mussels and fiddlehead chowder meal as one of the social functions.

Captain Jack, Here's a chowder recipe...

1. About 2 lbs. of salmon cubed
2. 1 onion diced
3. 3 potatoes cubed
4. 2 carrots cubed
5. 2 cans carnation milk
6. table spoon of pepper corns
7. fiddleheads
8. tsp. salt

In a large pot throw in potatoes, onion, carrots, pepper corns, and fiddle heads.
Just cover with water and bring to a boil for about 10-12 minutes. Throw in some salt.

Then add salmon. Cook another 10 mintutes.
Add 2 cans of carnation milk, add a tablespoon of butter and simmer for about 20 minutes.

Substitute salmon for tilapia, haddock of halibut.

Then enjoy.

Peter, never been much of a "measurer" when it comes to cooking but I would think a couple handfulls.
Fiddleheads probably take less time so add them in part way through. Just make sure all the veggies are covered by about an inch of water.

Keep in mind if/when you try this don't drain the water. After you par-boiled the veggies and "poached" the fish/seafood it becomes the broth. Try some shrimp sounds good. I've thrown some scallops in before and it was good. The last step is to add the carnation milk, butter then just let it do it's thing on a low simmer.

Now my favorite is cream of leak and potatoe soup. But watch how many leaks you use or you know what will happen.

Them snail shaped things are some yummy just steamed and served with butter and a little vinegar just like young spinch.

Peter, It took a little while longer for the fiddleheads in the Kawarthas but they are here now.

First feed tonight, simply steamed with lemon juice and S & P and Butter. They were helped out though by some mini-potatoes and what else? wild turkey strips of breast (egg dipped, rolled in flour and spices and deep-fried). Life is tough!

Tomorrow night, we're into the chowder with Rainbow trout as the fish of the day (home caught on the dog training pond on the fly!). The recipe will be like all chowders-whatever moves you- some onion, some chives, some wild leek, some potatoes, some 1/2 and 1/2 (Fat Free), spices and the fiddleheads. So far I haven't found the morels-it's hard to bring it all together but I'll bet next week and maybe even first asparagus. Oh and maybe some wine!

Blame it all on training the dogs and being outside.

Off to Niagara to judge the Junior and Qualifying - always fun meeting up at the first trial of the year!
