What do you do with the dogs if you are staying at a hotel during a hunt test? Do some hotels let you take them in as long as they're kenneled? How far in advance do you book your rooms?

Some motels will allow dogs in the rooms and some don't. You need to find that out when you reserve your room.

As for what everyone does at a test. My dogs usually stay on the truck which is parked right outside my door. If the dogs are allowed in the room then sometimes one of them sleeps in the room, if they had a good day.

As for when to book your room as soon as you are sure you are going and send in your premium I would book the room, Some of them can fill up really quick depending on the size of the place.
