How do you cook your Goose?
I've done strips, stir fry, stewed, roasted, grilled, but looking for something new....
I was thinking on proscutto wrapped goose breast baked with apples and onion.

Here is something I posted in another thread.....
Here is what I tried today with breasts of the 3 geese we harvested. Got a litre of coke and slow cooked the breast in that for 8 hours. When this was done the meat was so tender it could be pulled apart with a fork very easily. I don't know what it is about coke and slow cooker but it tenderizes meat so well. And for the record, use regular coke not diet. Anyway I drained it and I then grabbed a bottle of barbecue sauce and mixed that into the meat.... mmmmm pulled goose in barbecue sauce on a bun. Nice...very nice.

Here is one I tried this week. It was very good.
If you like a good pulled BBQ sandwich then this will quickly become a favorite.
Take as many breasts as you like and slice inti 1/4-1/2" slices across the breast. Check carefully for shot.
Throw all of the sliced goose breast in a Crockpot. Cover with Apple Cider and sprinkle some brown sugar in there....do not over do it on the brown sugar.
Let simmer on low for 7-9 hrs or until the meat falls apart as you stir it.
Drain liquid completely and discard.
Break meat up with wooden sthingy or fork as you would see in a pulled pork recipe.......meat will be falling apart easy at this point.
Return "pulled" meat to crock pot put on lowest settingNow add your favorite BBQ sauce to coat evenlyI like to add some chopped raw onion as I add the BBQ sauce.
Cover and warm for say 15 minutes.
Take your favorite roll and add a heaping ladle of the goose meat

Those pulled goose meat sanwiches sound pretty tasty. Going to have to give those a go. I wound up doing the baked prosciutto wrapped breast with pears and onions, as well as thyme, oregano, rosemary and sage. 350 degrees oven for an hour and fifteen minutes(medium well). Tasty...tasty...tasty...
